Field Notes · series 1 of 4
Holding the Zones: Sub-Zero Wine Temperature, Explained
These notes are about one number: the temperature a wine zone really holds, as against the one it shows. On the island that number gets pushed around by things a showroom never sees, from shoreline air and a west window to a range two feet away and a winter night without power. Each note starts at the symptom and ends at what gets checked first.
The notes, in reading order
- When a Sub-Zero Wine Cooler Will Not Hold Its Zones
The first note in the series: one zone warm or both, and why the two are different faults.
- Both Zones Warm: When a Sub-Zero Wine Unit Stops Pulling Down
Both zones creeping up together: the machine bay, the air around the cabinet and the door, before the compressor.
- Red, White and What a Sub-Zero Wine Unit Can Actually Hold
What to set each zone to, what the range allows, and when a zone that misses its number has a fault.
- A Wine Unit That Starts and Stops Every Few Minutes
Timing the start-stop pattern, and why heat trapped at the kickplate is where we look first.
- The Display Says 55: Checking a Wine Unit With a Probe
What the number on the panel actually means, and the twelve-hour glass-of-water check for each zone.
- Heat Next Door: Wine Columns Beside a Range and West Glass
A cooking range, and afternoon sun, beside a wine column: what the extra heat does and what can change.
- After the Wind: Restarting Wine Storage When Island Power Returns
Door shut while the power is out, four checks when it returns, and the signs that call for a visit.
Start with whichever note matches what your display is doing tonight.
The other three series
- Lake Air Fog on the glass, damp labels, tired gaskets, frost on the coil and units living outdoors.
- Under the Counter Undercounter refrigerators, beverage centers and drawers — small machines with little air.
- One Bridge The phone call, the parts wait, a long absence, a remodel and two units on one trip.
